The holidays are here, which means it’s time for some baking! I absolutely love baking around Christmas time with my mom and sister. We always play Christmas music and have the best time together! We have so many different cookies that we love to bake which means a lot of sugar and extra calories, so I love baking with SPLENDA® that I pick up at my local Walmart. Whenever I’m invited to a cookie swap around Christmas, I always make white chocolate cranberry cookies! The recipe that I love to make is a variation of this recipe by Trisha Yearwood.
Here’s what you need:
1/2 cup SPLENDA® Brown Sugar Blend
1/2 cup butter
1 tablespoon vanilla extract
1 1/2 cups flour (I use gluten free flour whenever my sister is around)
1 1/2 teaspoon baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup dried cranberries (or any dried fruit that you love!)
3/4 cup white chocolate chips
Here’s how you make them:
1. Preheat the oven to 350 degrees
2. Beat the butter and sugar together with an electric mixer until it’s fluffy. Add the vanilla and egg and mix it together. Then add the flour, baking soda, cinnamon, and nutmeg in a separate mixing bowl. Add this to the butter mixture gradually, then mix in the dried fruit and chocolate chips.
3. Using a cookie scoop, drop the dough onto a cookie sheet.
4. Bake for 12-15 minutes.
