How To: Increase Your Veggie Intake

Ever since I started my health and fitness journey, I've been trying to find more ways to incorporate vegetables into my diet! I'm a vegetarian, but I used to have a hard time eating enough vegetables each day. With the eating plan that I follow, I have to eat 4 servings of vegetables a day and I've starting coming up with more ways to eat them to make sure I'm getting my fill. Here's how I do it:

1. Add veggies in your smoothies or juice: I love starting my day with a smoothie, or having a protein shake as a morning snack. One way to get an extra serving of vegetables, is to incorporate spinach into my smoothie or shake. It's such an easy way to eat vegetables without realizing it!

2. Substitute cut up vegetables for your afternoon snack: Instead of eating a sugar coated granola bar or a bag of chips for my afternoon snack, I love bringing carrots or sweet peppers to work. It's such an easy snack to pack, and I love eating them with a side of guacamole too!

3. MorningStar Farms® Veggie Bowls: These Veggie Bowls are the perfect meal if you have a busy schedule like I do! I love bringing them to work for lunch, or I eat them for dinner after going to Flywheel. I pick them up at Walmart and my favorites are the Chik'n Pot Pie and Italian Sausage Bake. They are quick, easy, and help my husband and I stay on our healthier lifestyle journey. My husband isn't a vegetarian like I am, but they are not only for vegetarians—they are for everyone. Have you tried these before?

  3. I love eating lots of veggies (the hubs not so much) but I sometimes struggle to get enough, I feel like. These are great tips! I've been thinking about doing smoothies in the mornings but that would mean I would have to get up earlier...

  4. Oh yum! I was snacking on some colorful peppers and carrots with some hummus the day after Thanksgiving - I needed something easy and light after a few heavy meals :D
