21 Day Fix Dinner Ideas-@headtotoechic-Head to Toe Chic

I mentioned before that my husband and I are following the 21 Day Fix program again (you can read about how it works here)! Last time I followed this program I lost over 50 pounds, so I know that it’s definitely a program that works for me. I’ve been really wanting to get back into shape and eat healthier since having Charlotte, but it was honestly so challenging when she was waking up 7 times in the middle of the night up until a couple months ago. Now that she is finally sleeping, I have enough energy to wake up in the morning and work out and to also cook a healthy meal after work. Here are my 5 favorite vegetarian dinner recipes when following the 21 day fix, and they take less than 30 minutes:

 

Mexican Quinoa Bake

Ingredients:

1 cup of uncooked quinoa

2 cups shredded Mexican cheese

1 diced small onion

1 bag of sweet peppers, diced

1 cup frozen corn

1 tsp of ground cumin

1 tsp of chili powder

2 cans of black beans, rinsed and drained

2 cups of red enchilada sauce

1 sliced avocado

Steps:

1. Preheat the oven to 350 degrees and spray a 9×13 baking dish with cooking spray.

2. Add the quinoa and water to a medium saucepan and bring to a boil.  Cook the quinoa according to the instructions on the package.

3. In a skillet over medium heat, cook the onion, corn, sweet peppers, cumin, and chili powder with a little bit of olive oil. Cook until the onion becomes translucent.

4. In a large mixing bowl combine the cooked quinoa, veggies, black beans, and enchilada sauce.

5. Pour the mixture into the 9×13 pan, and add the cheese on top. Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes.

6. Serve with sliced avocado on top.

 

Vegetarian Tacos

Ingredients (serves 2):

4 corn tortillas

1 can of black beans

1/4 cup of  frozen corn

1 medium zucchini

1 medium squash

1 small avocado

3/4 cup of salsa

4 tsp of shredded Mexican cheese

Steps:

1. Preheat the oven to 350 degrees and spray a 9×13 baking dish with cooking spray.

2. Add the quinoa and water to a medium saucepan and bring to a boil.  Cook the quinoa according to the instructions on the package.

Vegetarian Chili

Ingredients:

1 (15-oz.) can Black beans

1 (15-oz.) can Kidney beans

1 (4-oz.) can Green chiles

1/2 medium onion, chopped

1 bell pepper, chopped

1/2 cup frozen carrots

3 cups of vegetable broth

4 oz Tomato paste

1 tsp Chili powder

1 tsp Cumin

Optional: shredded cheese and avocado slices to top the chili

Steps:

It’s really easy! All I do is put all of these ingredients into a crockpot in the morning before I leave for work. I put it on low heat and let it cook all day for 10 hours, and all the flavors come together so nicely.

 

Pita Pizzas

Ingredients:

2 whole wheat pita pockets

1 small can of tomato sauce

1/4 cup of shredded mozzarella cheese

1/4 cup of part-skim ricotta cheese

1/2 cup of fresh spinach

Steps:

Preheat the oven to 350 degrees

Spray a baking sheet with spray and lay the pita pockets on the baking sheet

Put a layer of tomato sauce, a layer of mozzarella cheese, spoonfuls of ricotta cheese, and then top with fresh spinach

Bake in the oven for about 10 minutes or until the cheese is melted

 

Zoodles and ‘Meatballs’

Ingredients:

1 bag of meatless meatballs (I like to use Gardein or LightLife)

1 jar of tomato sauce

2 bags of frozen zucchini noodles

Steps:

Pour the tomato sauce in a sauce pan on medium heat, and cook the meatballs in the sauce per the directions

Microwave the zucchini noodles (or you can make your own with 4 zucchinis and a spiralizer)

Combine the sauce, zucchini noodles, and meatballs and top with grated parmesan cheese
