I’ve shared this dish on Instagram stories (@akeeleywhite) a few times already and I’ve gotten some questions, so I wanted to post the full recipe here today! I originally found this recipe here, but I make it a little differently and wanted to share more about that. It’s the perfect summer recipe, and it’s such an easy side dish to make on a weeknight. This is how you make a simple caprese asparagus:
Ingredients:
1 bunch of asparagus
1 pint of grape tomatoes
Fresh mozzarella cheese (you can put as little or as much as you like)
Balsamic glaze (enough for a drizzle)
How to make it:
1. Preheat the oven to 450 degrees.
2. Trim the stalks on the asparagus and cut the grape tomatoes in half.
3. Place the asparagus and tomatoes on a cookie sheet with a little olive oil and bake for about 20 minutes.
4. Once the vegetables are done, plate them, top with fresh mozzarella cheese, and drizzle with a balsamic glaze.
