A few weeks back I met with a nutritionist which was so helpful! I’ve been making more of an effort to make quick and healthy meals since then, and I made this for dinner on Sunday. I’m all about caprese everything lately because it’s so refreshing for summer, and this salad was so good! Here’s what’s in this strawberry caprese salad:
Grape tomatoes (cut in half)
Strawberries (cut in quarters)
Mozzarella cheese (cut into cubes)
Tofu (you can use any protein that you like)
- Chop everything up and toss in a bowl
- Drizzle the balasamic glaze and olive oil on top.
